We recently visited an apple orchard so naturally I had to make my apple crumble! The smell of cinnamon and apples is something that just makes me so happy.
When I stopped having dairy, I thought that was the end of my baking days…but then I discovered Earth Balance spreads. They taste SO good and literally taste like butter in baking, on popcorn, on toast etc. I’d still use it even if I wasn’t dairy free. You can also substitute coconut oil or regular unsalted butter in this recipe.
I had this for breakfast one day and it was such a nice treat! Lightly sweetened with maple syrup so no refined sugar in this recipe and no flour either! In my opinion, it just makes the crumble goopy so I like to just put my topping on the top. Crunchy and nutty – So tasty!

Notes
Use gluten free oats if this is necessary for you. Coconut oil or regular unsalted butter can be substituted for earth balance, which is a brand of vegan butter.
Ingredients
- 2 large apples quartered and peeled and sliced finely (I used ambrosia)
- 1 cup quick cooking oats (gf)
- 1 tbsp chia seeds
- 2 tbsp coconut shreds (opt.)
- 2 tbsp maple syrup
- 2 tbsp vegan butter melted (earth balance)
- 1/4 tsp all spice
- 1/2 tsp cinnamon
- 1/2 cup chopped walnuts (sub pecans or almonds)
Toppings (optional):
- Goji berries
- coconut yogurt
Instructions
- Preheat oven to 350F.
- Peel and slice apples thinly then layer apples in your pie dish or other glass pan. If using a metal pan, lightly grease with some extra vegan butter.
- Mix remaining ingredients in a bowl and sprinkle on top.
- Bake at 350F for 30 minutes until apples are slightly soft or to your preference.
- Top with a few goji berries and some coconut yogurt and enjoy immediately
