Hi friends!
I don’t know anyone who doesn’t like to save time, especially time in the kitchen and that is exactly why I LOVE prepping things for the week that I can enjoy all week long without giving it a second thought. I work a busy job and sometimes that requires staying late. If I don’t prepare most of my meals on the weekend, that leaves me to eat the stuff that is closest to me, which is inconveniently food court fare.
I regularly make overnight oats for the week because they are DELICIOUS and last all week without getting icky! This week I wanted to experiment combining my recipes for chia pudding with my overnight oats. I’m a fan! That’s for sure. The chia gives this recipe some crunch that regular overnight oats don’t have. Please note that this recipe requires a bit of advanced planning but literally will take you 5 active minutes to actually prepare and the rest is just fridge time! I also love that it’s so versatile in that you can use the toppings you want or the fruit you want or is in season!

Notes
* I use the brand Truvia
**Ensure you use certified gluten-free oats if required.
Ingredients
Pudding
- 3/4 cup quick cooking oats**
- 1/4 cup chia seeds
- 2 cups unsweetened almond milk or other non-dairy milk
- 1 tsp vanilla extract (optional)
- 1/2 tsp Stevia* (or 2 tbsp honey or maple syrup)
Toppings (optional):
- 1/2 cup chopped strawberries
- 2 tbsp almond butter
- 1 tbsp nuts of choice etc.
Instructions
- Combine all pudding ingredients in a bowl, cover and refrigerate overnight or for 4-6 hours to allow the chia seeds to soak up the liquid.
- At this time, you can serve cold with toppings of choice or assemble it with your toppings to be eaten later as breakfast or a snack. I decided to use strawberries and a bit of almond butter for my toppings.
