Hi friends!
Energy balls are one of my ultimate meal prep MVP’s. They are so easy and can be customized to your tastes and preferences. Since they aren’t baked, you really can substitute ingredients as long as you keep the ratios the same or know how to compensate by substituting like things for like things based on what you have on hand. I love making my energy balls vegan, gluten-free and full of good fats for that afternoon hit that won’t spike my blood sugar. The store bought ones are good but are a couple dollars for only 1 or 2 and who knows what they are sprayed with to last for months on the shelf too!
I made these grain-free delicious lemon-coconut energy balls in my food processor, which is by KitchenAid. I thought it was one of those appliances I would barely use but I use it constantly! It’s easy to clean and put together and has a bunch of different settings and attachments like a slicer. So if you’re on the fence, I’d definitely suggest getting one. Ingredients
Dry ingredients:
- 2 cups shredded coconut (unsweetened)
- 1 cup almond flour (or grind almonds to a fine flour)
- 3/4 cup nut/seed mix (I used 12 Brazil nuts+1/2 cup hemp seeds)
Wet ingredients
- 2 tbsp almond butter
- 5 medjool dates (pit removed) (more if you like sweeter)
- Juice and zest of 1 lemon
- 1 tbsp water
Instructions
- Soak dates in warm water while you gather remaining ingredients.
- Mix dry ingredients in food processor on low for about 2 minutes until mixture is crumbly and even sized.
- Add remaining ingredients and mix for another 3 - 5 minutes until combined well.
- Pinch mixture between your fingers to see if it sticks together. If so, form into balls. If not, add a bit more almond butter.
- Enjoy!
