Healthy Banana Carrot Breakfast Muffins

Hi friends,

Breakfast muffins can be such a fun way to start the day in the morning when they are packed with nutrients. These muffins are dairy-free & perfect for people who want a small bite to start their day and don’t always have time for a big breakfast. A lot of my nutrition clients want something quick and easy to prep for the week and love to bake so this recipe is perfect for that.

What you’ll need for these breakfast muffins (feel free to swap ingredients as suggested):

ripe bananas (the spottier the better)
shredded carrot
walnuts (or any nut or dried fruit)
semi-sweet chocolate chips (dairy-free)
coconut sugar
nut or seed butter (I used tahini)
all purpose flour (or a gluten-free blend you like)
baking powder
collagen (optional)

Muffins are a great treat to freeze as well. I like to wrap them in saran wrap individually to avoid any sticking/frost bite and being able to just remove a few to defrost.

I purposely picked walnuts to be used in this recipe because they are a nutrition powerhouse yet not a common nut consumed by most. Walnuts are a great sources of polyunsaturated fats and Omega 3 fatty acids, which may decrease inflammation, are rich in antioxidants and a source of magnesium, potassium, iron, calcium and folate. Pro tip: Store your walnuts in the freezer or fridge and just take out what you need. Walnuts go rancid VERY quickly, which is not only bad for your health but also bad for your wallet when a big bag goes bad!

Pro baking tip: If you haven’t invested in silicone baking cups yet, it’s a must! They make clean up SO easy and are better for the environment too since you can re-use them for many many times. I bought two packs of these silicon muffin liners so I always have liners on hand to make treats and enjoy them at the same time. I rinse them with water and then either throw them in the dishwasher (making sure they are placed properly so they actually clean) or just hand wash. If you’ve ever greased a pan and have had a sticking disaster, you will understand why silicon liners are the best thing ever.
