🍩 2021 MOTTO: DONUT WORRY ABOUT A THING. Made m 🍩 2021 MOTTO: DONUT WORRY ABOUT A THING. Made my VEGAN + GLUTEN-FREE COCONUT DOUGHNUTS! (Recipe on the blog!) BUT this time,  I made a chocolate icing by adding cacao powder to my recipe and using coconut oil instead of vegan butter. For the base: I used a mix of nut butter, coconut flour and tapioca starch to create a soft texture that doesn't crumble.

CREAMY DAIRY FREE PESTO PASTA may just be my new t CREAMY DAIRY FREE PESTO PASTA may just be my new thing. You NEED to try... I didn't measure but general deets👇 serves approx 5-6. To make vegan, use vegan pesto and swap shrimp for chickpeas, tofu or tempeh. The colour was brighter when I made it but this was a leftovers shot and still tasted amazing!

1 package (375g) whole wheat penne
4 servings frozen shrimp, without shell and defrosted in cold water (sub vegan protein if needed)
3/4-1 cup pesto of choice (I used vegan homemade pesto)
1/4 cup white onion, chopped
2 tbsp olive oil
1 cup coconut cream
2 tbsp Lemon juice
3 tbsp nutrtional yeast
Spices to taste: chilli flakes, salt, pepper, garlic powder
1/2 cup sundried tomatoes(in oil)
6 artichoke quarters, chopped
3 cups chopped kale or spinach
.
1. Cook pasta to box directions, rinse in cold water and set aside.
2. Saute onion and olive oil on medium heat until fragrant and soft. Add kale or spinach and allow to cook down.
3. Add in pesto, coconut cream, spices, shrimp and heat through.
4. Add pasta and any remaining ingredients. Toss and enjoy warm!
