Hi friends!
This weekend was a scorcher and I loved it! It’s about time since Vancouver has been more cold, wet and snowy this year than it has been in a long time! But naturally as the days get warmer, my craving for popsicles and ice cream goes way through the roof but all those artificial dyes and sweeteners in store bought products are not something I want to put into my body on a regular basis and as often as I want a frozen treat!
I feel like it’s my civil right to share with you my favourite summer treat, so much so that I will make it a few nights a week during those long heat wave nights that are inevitably coming! These ingredients are all natural and sweetened without any processed or refined sugars. A treat that will make mum, dad and the kiddos happy this summer. So if you have 5 minutes, what are you waiting for? Get going and make this!! Trust me, you won’t be disappointed. I actually prefer this to regular ice cream any day 🙂 .
The possibilities with this are really endless. Some of my favourite combos include:
- For matcha nice cream: add more banana (no strawberries) + add 1 tbsp matcha or more to taste
- For chocolate nice cream: add 1 tbsp cocoa powder (unsweetened kind) + 1 tsp maple syrup
- For peach nice cream: sub peaches for strawberries
- For chocolate hazelnut nice cream: add 1 tbsp cocoa powder + 1 tsp maple syrup and a handful of hazelnuts
… I think you get the point! The possibilities are really endless and that’s half the fun in making nice cream 🙂 .

Notes
See notes in post for any substitutions. The banana makes it creamy so I wouldn't skip that unless you have to but feel free to use any other fruits for the strawberries.
Depending on your flavour combination (ex: cocoa powder), you may need to add some sweetener. I'd reccomend maple syrup or honey if you're not vegan.
Ingredients
- 1 cup frozen strawberries
- 1 ripe frozen banana
- 3 tbsp unsweetened almond milk
Optional toppings:
- fruit
- cacao nibs
- coconut flakes
- bee pollen
Instructions
- Add all ingredients to a food processor fitted with the 'S' blade.
- Mix on low for 2-5 minutes. Stop every so often to scrape the sides of the food processor.
- Serve right away!
