Hi friends!
This week, I wanted to share one of my favourite quick after dinner dessert recipes. I made this for my boyfriend and I for Valentine’s Day after our yummy dinner at home of steak and asparagus. A special dinner just isn’t complete without dessert, am I right?? I love apple pie! It’s the best classic dessert that everyone enjoys…seriously who doesn’t with all its cinnamon and sugary goodness. The way this apple crisp fills your home with its lovely scent will be sure to have neighbors knockin’ on your door.
Unfortunately, I never have time to make it when I’m craving it or really feel like making an entire pie… ever. I always have these ingredients in my home so it’s easy to whip up whenever the cravings strike! Desserts that are small are so perfect so then I’m not forced to eat it all week and then feel guilty about it. 1 or 2 treats per week is plenty for me 🙂 . I used these cute porcelain ramekins for my dessert. They are so versatile and the perfect personal sized treat.

This recipe is gluten-free, dairy-free, soy free and vegan but make sure to use certified gluten-free oats and soy-free Earth Balance if required.

Just Sweet Enough Apple Crisp Cups
Notes
Feel free to substitute another nut for pecans like almonds or walnuts or you can omit altogether.
You can also substitute regular butter for the Earth Balance. I use the soy-free Earth Balance but there are many varieties and you can use whichever fits your dietary requirements.
Ingredients
- 2 Granny Smith apples
Topping
- 1/3 cup quick cooking oats (gluten-free if required)
- 1/3 cup pecans chopped
- 2 tbsp brown sugar
- 1/2 tsp cinnamon powder
- 1/4 tsp nutmeg
- 1 tbsp Earth Balance Vegan Butter (soy free & melted)
Instructions
- Prepare 4 ramekins on baking tray (to catch excess) or 1 9x5 non-stick loaf pan.
- Peel and chop apples into small pieces and place in the pan that you are using. Push the apples down a bit to pack the ramekin as the apples will shrink as they cook.
- Mix first 5 topping ingredients in bowl.
- Melt vegan butter in microwave for 15 seconds and mix into topping mixture.
- Divide topping mixture evenly on top of apples. You may have a bit extra.
- Bake at 375F degrees for 25-35 minutes until apples are tender to your liking. I like mine more crispy.
- Enjoy as is or top with ice cream/whip cream if desired.
