Hi friends!
I’m such a dessert person and literally anything chocolate is the way to my heart. Sometimes I just crave a sweet bite but don’t want to make a huge dessert so I love making bites like these that stay in my fridge and are available when I need them.
I used the Garden of Life’s “All-in-one Nutritional Shake” packet in chocolate cacao flavour, which is vegan, has no gluten, soy, dairy, tree nuts, added sugars, filler ingredients, artificial colors, flavors, sweeteners or preservatives and has 40 grams of protein per packet (2 servings/packet). You can buy it on their website by clicking here or use any other vegan protein powder you like! I have a dairy allergy so I have not tried this with any dairy based powders like whey or casein. The chocolate-espresso topping and the bee pollen is totally optional, I just wanted something a bit more decadent for my sweet tooth 🙂 .

Topping is completely optional. You could also sub with coconut shreds, cacao nibs, sprinkles etc.
Dough should be sticking together but not super wet, if not, add more coconut oil or almond milk.
Ingredients
- 2 scoops vegan chocolate protein powder (73g)
- 1/4 cup almond flour
- 3/4 cup quick cooking oats
- 1/4 cup almond butter (or other nut butter)
- 1/4 cup coconut oil (melted)
- 6 pitted dates (soaked & pits removed)
- 1 tsp vanilla extract
- 1 tbsp almond milk
- 1 tsp instant coffee (optional)
Optional Toppings:
- 1/2 cup dairy free chocolate chips
- 1 tbsp almond milk
- 1 tsp instant coffee (optional)
- 1/4 cup bee pollen (optional)
Instructions
- Soak dates in warm water while you are getting the other ingredients ready.
- Combine all bite ingredients in a food processor. Remove pitts from dates and add that now. Then run the food processor on high for 2-4 minutes until the mixture is sticking together.
- Form into balls.
- If you would like to do the chocolate topping, combine the optional toppings (minus bee pollen) in a double boiler until the chocolate is melted. Dip half the bite in chocolate, then in the bee pollen. Let sit to dry for at least 10 minutes.
- Enjoy immediately or refrigerate the remaining bites.
