Hi friends!
Today’s post is all about an easy snack or breakfast idea! I used to love grabbing yogurt parfaits from restaurants as a quick snack but when I started paying attention to the ingredients, I was shocked at how much sugar such a little container contained. I’m dairy free now so I can’t pick up those grab and go cups anyways. For this parfait, I used coconut yogurt but since it doesn’t have the same protein as animal based yogurt like Greek yogurt, I also added some collagen peptides. If you haven’t gotten on the collagen train, no problem! Just use whatever plain yogurt you like best 🙂 .

The main reason I love collagen is for how strong my nails are when I take it regularly and not to mention the benefits it has for your gut.
I’ve been on a blueberry craze these days ever since I bought about 5 lbs and had to use them fast and/or freeze them!! It’s not a bad craze to be on anyways since blueberries have powerful antioxidants that protect our body from free radical damage and may help fight cancer cells.
I would love for you to have some fun with your parfait or even get the kids involved, 1 layer? 5 layers? You’re the queen/king of your kitchen so go wild! Commercially available yogurt parfaits are laden with sugar but with the right ripe fruits, you don’t even miss the sugar in this recipe.

Notes
If you like a sweeter parfait, I'd suggest a drizzle of honey or add some maple syrup to your chia or yogurt mixture.
If you are vegetarian and eat fish, marine collagen might be right for you. If you are vegan, please omit the collagen.
Ingredients
Chia pudding soaked overnight
- 1/2 cup chia seeds
- 1 1/2 cup unsweetened cashew milk
- 1/2 tsp vanilla extract (or 1 vanilla bean pod)
Yogurt mixture
- 1 1/2 cup unsweetened coconut yogurt (or Greek)
- 3/4 cup frozen or fresh blueberries
- 1 scoop Further Food Collagen
Optional Topping
- 1 tsp rose petals
- 1/2 cup fresh blueberries (or other fruit like strawberries, bananas etc.)
Instructions
- Combine and thoroughly stir chia pudding ingredients. Refrigerate overnight or for at least 6 hours.
- The next day, combine Yogurt mixture and layer with equal parts chia pudding and yogurt mixture.
- Use extra blueberries or fruit to layer or for topping at the very end.
- Enjoy!
